Make Ahead Muffin Mix
Last year I shared two recipes for muffin mixes you can make ahead for your own baking, or to give away as gifts. Having these mixes on hand gives you a quick way to whip up a batch of homemade goodies when company is coming over, your family wants a healthy treat, or you want something to bring to a friend’s house. I’m sharing one of these recipes again, with 3 variations that are healthy or decadent…take your pick!
Muffin Mix
- 5 1/2 cups unbleached flour
- 2 1/2 cups quick cooking oats
- 4 1/2 cups whole wheat flour
- 2 cups sugar
- 2 tsp salt
- 3 Tbs baking powder
Mix all ingredients thoroughly and store in an airtight container. Make a larger batch if you like, by doubling or tripling the ingredients. If you are stocking up on food preps for the future, I suggest using this mix within one year. Remember to rotate your food stores so they don’t go bad!
Baking a Batch of Muffins
For each batch of 1 dozen muffins:
- 2 cups muffin mix
- 1 cup buttermilk, milk, or whey
- 1/3 cup oil
- 1 large egg (duck eggs work very well)
- 1 cup of your choice of dried fruit, chopped nuts, or baking chips (chocolate, butterscotch, etc)
Mix all ingredients just until dry ingredients are moist. Batter will be lumpy. Spoon batter into greased muffin tin. Fill each cup about 2/3rds full. Bake at 400 F for 15 minutes.
When I originally shared this recipe, I promised to share three different variations of muffins using this mix as a base. Well, I guess it’s high time I share those!
Pineapple-Peach Muffins
For each batch of one dozen muffins, add 1/2 cup dried pineapple pieces and 1/2 cup dried peach pieces. Follow directions for baking a batch of muffins.
Cranberry-White Chocolate Muffins
For each batch of one dozen muffins, and 1/2 cup dried cranberries and 1/2 cup white chocolate chips. Follow directions for baking a batch of muffins.
Triple Yummy Muffins
For each batch of one dozen muffins, and 1/3 cup chocolate chips, 1/3 cup white chocolate chips, and 1/3 cup butterscotch chips. Follow directions for baking a batch of muffins.
Make-ahead hot-chocolate mix is delectable as well. I shall be sure to keep both hot-chocolate and muffin mixes in pantry for warm-up winter emergencies!!!
