Too Many Eggs in My Refrigerator
It’s that time of year, when the hens are laying eggs in overdrive and I can’t seem to use them all up before the fridge is overrun. It’s not a ‘problem,’ really…it just means that we eat eggs every day.
Yeah, my fridge is a mess…I know.
Is your refrigerator starting to look like mine? I think I have 14 dozen eggs in there right now…chicken and duck eggs. So I’m on a mission to use some extras up this week, because there are a dozen+ eggs coming every day and it’s time to get this under control! Yesterday I made a Rhubarb Cake with some of our duck eggs…yum! I think today I’ll boil some for egg salad sandwiches. And maybe we’ll have an omelet for dinner tonight. 😉

What a lot of eggs, I don’t have any ideas for how to use them. Just saying that you have a wonderful dilemma on your hands..

My sister tells me stories of too many eggs too…she lives on a farm and sometimes has had 55 dozen eggs in her refrigerators!!!! Busy chickens… she sells extra eggs. I still have to buy mine…she lives hundreds of miles away, so I can’t get them from her. 🙂 She gets really creative with what to do w/ the extras also. 🙂

We have a backlog of people who want out eggs! But then again, we feed them no corn no soy, non GMO whole grains, organic food scraps, mealworms, and oyster shell. Once a month I put out a small bowl of yogurt to help keep their stomach enzymes in order…and in the winter I feed them warm oatmeal. I gots me some HAPPY chickens…they are huge, and even my Marans are laying close to one a day. And the bonus: they pay for themselves, and all the eggs we can use.
You have some very lucky chickens there 😉 And it’s great that you can sell all of the extra eggs to pay for their upkeep! I guess it all depends on where you live.
Wow – that’s a lot of eggs! Is there a reason you store them in the fridge instead of on a kitchen/pantry shelf? I’d always been given to understand that fresh eggs can easily be stored at room temperature for up to a couple months as long as they’ve never been refrigerated before. Might give you a little extra space in the fridge… although, with that quantity, I suppose it wouldn’t be long until you were walking on eggshells 🙂 no matter where you store them!

I have stored eggs unwashed and unrefrigerated for up to 3 months as an experiment. But they do store longer in the refrigerator and I normally wash them because they get dirty with so many hens fighting over the ‘best’ nest spot…sheesh.
If you decided to store eggs on the shelf, either refrain from washing, or rub them with a bit of mineral oil to replace the ‘bloom.’ I’ve read that you can store them up to 6 months that way…but I haven’t tried that. After 3 months, I found that I need to either use the eggs in baked goods or feed them back to the chickens…they smelled and tasted very strong, not bad, but gamey. I couldn’t bring myself to eat them as scrambled eggs.
I did have friends buy 6 dozen after that photo and I’ll have some chickens going to a new home soon…so the number of eggs should be more reasonable. 😉
We are starting to get quite a few too. Good thing that I have a daughter who comes by and takes an 18 pk. home with her about twice a week!
I used to make up BIG batches of French toast and put them in the freezer when we had an egg over load. My kids said I burned them out on French toast!
Guess what we are having for breakfast tomorrow? or maybe even dinner?

I’ve been freezing mine according to recipes. Like 5 scrambled together for my fave gluten free bread, 4 together for a cake. etc, Then when the girls go on vacation I’ve got what I need.

My daughter found a woman that bakes & sells those big cookies. She’s concerned about using the freshness ingredients she can find. My daughter sells her 28 dozen eggs per week. Find yourself a good baker!

I like to boil a bunch for salads or to just eat by themselves. You can really never go wrong with a boiled egg!

I love boiled eggs 🙂 But I tried giving one to my dog, Shadow. That went wrong…very wrong!
When we have extra eggs, I put them in cartons and half cartons to give to the older folks at church, and to those who are struggling. Also, our local food bank accepts eggs and any extra garden produce gladly. When we are also overrun with zucchini we make pizza “crust” with shredded, drained zucchini. It’s also gluten free that way.
