Too Many Eggs in My Refrigerator

It’s that time of year, when the hens are laying eggs in overdrive and I can’t seem to use them all up before the fridge is overrun. It’s not a ‘problem,’ really…it just means that we eat eggs every day.

Yeah, my fridge is a mess…I know.


Is your refrigerator starting to look like mine? I think I have 14 dozen eggs in there right now…chicken and duck eggs. So I’m on a mission to use some extras up this week, because there are a dozen+ eggsย coming every day and it’s time to get this under control! Yesterday I made a Rhubarb Cake with some of our duck eggs…yum! I think today I’ll boil some for egg salad sandwiches. And maybe we’ll have an omelet for dinner tonight. ๐Ÿ˜‰
