Too Many Eggs in My Refrigerator
It’s that time of year, when the hens are laying eggs in overdrive and I can’t seem to use them all up before the fridge is overrun. It’s not a ‘problem,’ really…it just means that we eat eggs every day.
Is your refrigerator starting to look like mine? I think I have 14 dozen eggs in there right now…chicken and duck eggs. So I’m on a mission to use some extras up this week, because there are a dozen+ eggs coming every day and it’s time to get this under control! If you need some ideas for how to use up all those fresh spring eggs from your flock, check out my post What to do With Extra Eggs.
Yesterday I made a Rhubarb Cake with some of our duck eggs…yum! I think today I’ll boil some for egg salad sandwiches. And maybe we’ll have an omelet for dinner tonight. 😉
