Foraging

With the warm days and sunshine of spring, a whole host of wild edible greens are ready for harvest. Everyone knows about dandelion greens, but there are also others that are easy to find and highly nutritious…garlic mustard (invasive, so you can’t over-harvest!), plantain, lambs quarter, amaranth, and curly dock are all ready in our area, or they will be soon. I’m using them for cooked greens or for mixing in our salads for the extra vitamins. Since my garden greens aren’t ready yet, these freebies are a welcome addtion to the dinner plate!
