Whole Grain Blueberry Muffins

Whole grain blueberry muffins with raw butter…yum!

Muffin Mix

In November I shared a recipe for muffin mix that you could dress up for gift giving. There are 2 recipes for slightly different whole grain mixtures depending on what you have on hand and how ‘whole grainyโ€™ you want your muffins to taste. I used the second recipe listed, with half of the flour being unbleached and organic. I also use organic sugar rather than the processed white sugar to be a little healthier.

 

One batch makes 12 muffins and you will want to add 1 cup of dried, fresh, or frozen blueberries. I used dried fruit in these, and I made a triple batch…since they donโ€™t last very long around the kitchen vultures. ๐Ÿ™‚

 

These muffins are delicious while they are still warm out of the oven, with a little pat of homemade raw butter or a little raw honey butter for a special treat.
