Apple Carrot Muffins
I have been tweaking the make ahead muffin mix I posted about here. There are so many wonderful combinations you can use to customize this recipe. This time I tried using grated apples and carrots and, oh boy, they came out really good!

Apple Carrot Muffins
- 6 cups muffin mix
- 3 cups low fat milk
- 1 cup canola oil
- 4 large eggs
- 2 small apples, cored and grated (I used granny smith and left the peel on)
- 1 medium carrot, grated
Mix all ingredients just until dry ingredients are moist. Spoon into greased muffin tins. Bake at 400 F for 15 minutes. This makes 3 dozen muffins. You could reduce the recipe by half if you don’t want that many muffins…but if you ask me, a little is good so a lot is better…right?!
You could add raisins and chopped walnuts if you like. These are not an overly sweet muffin, so you might want the extra sweetness of some dried fruit added into the mix.
