Baked Peaches

I had some extra peaches that needed to be used up, so I decided to try making a new recipe with them. This is basically a fruit crisp, but there isn’t as much topping on it. I made 2 pans, a 9×13″ and an 8×11″ pan and divided the crumble topping between the two pans to reduce sugar and fat. I also used low sugar home made plum jam for the glaze. I’m giving directions for one 9×13″ pan of this yummy, but not overly sweet desert. You can reduce the crumble topping by half if you want a lighter desert.

Glaze:
10 - 12 peaches or nectarine
1/4 cup jam or jelly
2 Tbs honey
4 Tbs water
1Tbs lemon juice

Crumble Topping:
1 cup sugar
1/2 cup unbleached flour
1/3 cup butter or margarine
1 cup chopped walnuts

Wash, pit and slice the peaches (peel if desired) and layer two slices deep in baking dish. In a saucepan, combine jam, honey and water. Stir over low heat until combined. Drizzle over peaches. In a bowl, combine sugar and flour, cut in butter until mixture resembles crumbs. Add nuts and mix well. Sprinkle over peaches. Bake at 350 F for 45 minutes. Cool and serve with whipped topping, ice cream, or all by itself!
