Pumpkin Bread

I usually make this recipe several times in the fall and early winter, but it’s so good I think I should make it more often! I guess the guys think so too because this bread doesn’t stick around long :) This is a very moist and tasty bread…great for snacks or for serving alongside your Thanksgiving turkey.

I can never wait overnight before slicing :)

Pumpkin Bread

  • 2 cups unbleached flour
  • 2 cups multi-grain or whole wheat flour
  • 2 cups sugar
  • 2 Tbs baking powder
  • 3 tsp pumpkin pie spice mix
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 cups cooked, strained pumpkin (or canned pumpkin)
  • 1 cup milk
  • 5 eggs
  • 2/3 cup lard (or shortening, if you must)
  • 1 Tbsp molasses
  • 1 cup chopped walnuts, optional
  • 1 cup raisins, optional

In a large mixing bowl, sift together the unbleached flour, sugar, baking powder, pumpkin pie spice, salt, and baking soda. Add pumpkin, milk, eggs, molasses, and lard. Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes. Add whole grain flour and beat well. Stir in nuts and raisins, if desired.

Pour batter into 2 greased and floured 9x5x3″ loaf pans. Bake at 350 F for 60-65 minutes or until a toothpick inserted near center comes out clean. Cool for 10 minutes on a wire rack, then turn loaves out onto wire rack to finish cooling. Wrap and store overnight before slicing…if you have the will power :)

I usually decrease the amount of sugar in the recipe to 1 1/2 cups, and the bread is still plenty sweet for us. The whole grain flour I use is often a 7 grain flour I buy from my co-op. You can tweak the recipe according to your own taste. I usually make this without the raisins and nuts, since Joe isn’t real big on those. Of course, that would mean more for me :) Nah, I enjoy watching that kid devour my baked goods like he hasn’t eaten in days!
