Almond-Oat Milk

Lisa Lombardo
This easy to make non-dairy 'milk' has a creamy texture and flavor and is a great substitute for purchased almond or oat milk.

Servings 4 cups

Equipment

  • blender, nut milk bag

Ingredients

  • 4 cups water
  • 1/2 cup rolled oats old fashioned or quick oats
  • 1/2 cup almond meal
  • pinch salt optional
  • 1 tsp vanilla extract optional
  • sweetener, to taste optional

Instructions

  • Add the oats, almond meal, and water to the blender. (For chocolate 'milk', add 1 or 2 tablespoons of cocoa powder now).
  • Blend ingredients on high for 1 minute
  • Pour the liquid through a nut milk bag placed in a sieve over a medium bowl to separate the milk from the solids. Use the solid 'waste' in oatmeal, pancakes, or another recipe to reduce waste.
  • Add a pinch of salt, vanilla, and sweetener (if desired) and stir well to combine. Shake container well before using.
  • Refrigerate the unused portion and use within two days for the best flavor. Shake container well before each use.

Notes

You may also use whole almonds in place of the almond meal. Soak 1/2 cup of almonds for several hours or overnight, drain the liquid, then use in place of the almond meal in this recipe.
