Sift together buckwheat flour, white flour, baking powder, salt, and sugar in a mixing bowl.
Add eggs, buttermilk, milk, and oil and stir just until ingredients are combined. There may be a few small lumps, that's okay.
If batter seems too thick, add a tablespoon or 2 of milk.
Spoon batter onto hot, greased griddle and fry until the bottom is golden brown. Flip and brown the other side.
Serve hot and top with butter, maple syrup, yogurt, fruit, or your favorite pancake topping.
Recipe makes approximately 20 to 24 pancakes.
