Quick Cookies for Busy Homesteaders

For all of you busy homesteaders who have trouble finding time to get everything done, these are much easier and faster to make than drop cookies. You can substitute olive oil or melted lard for the melted butter. You can also use any other dried fruit you have on hand in place of the raisins. I like dried cranberries.

These bars are rich in fiber, iron, and energy. Wrap some in foil to take hiking or for lunches.ย I like to make extra and freeze for days when we want a sweet snack but there isn’t time to bake.

Oatmeal Raisin Bar Cookies

  • 1 cup butter, melted
  • 2 cups sugar (I reduce this to 1 cup)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs, beaten (I use duck eggs)
  • 1 tsp vanilla extract
  • 1 drop molasses (approximately 1/2 tsp)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups flour
  • 1 1/2 cups raisins
  • 1 1/2 cup rolled oats

Oven 350 F. Mix melted butter and sugar. Allow to cool slightly. Add eggs, baking powder, baking soda, salt, spices, vanilla, molasses, and flour. Combine thoroughly. Add raisins and rolled oats and combine. Spread in greased 9×13″ baking pan. Bake at 350 F for 30 minutes or until top is golden brown. Cool on wire rack.

  1. I’ve been looking for an oatmeal raising cookie bar recipe for ages! I love oatmeal raisin cookies, but get impatient having to scoop the individual cookies onto a sheet, etc. Can’t wait to try these!

  2. Sounds delicious! one question though..it says add molasses in the directions, but I dont see it in the ingredient list! is it part of the recipe? If so, how much should I add?
