Who Doesn’t Love Chocolate Cake?!

I make this dark chocolate cake for my husband because he’s a huge dark chocolate fan. He’s also a fan of healthy foods, so I try to make our desserts as guilt-free as I can. Usually. I used mostly organic ingredients (including Organic Fair Trade Chocolate) and duck eggs from our own flock. And hey, dark chocolate is good for you, right?!

If you don’t have the organic ingredients, use what you have on hand. The duck eggs do make cakes spongy and moist, but chicken eggs will work just fine.

Dark Chocolate Cake

  • 2 c organic whole wheat pastry flour
  • 1 3/4 c organic sugar
  • 3/4 c organic cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 c softened organic butter
  • 1 tsp vanilla
  • 2 large eggs or duck eggs, lightly beaten
  • 1/2 cup organic dark chocolate chips

Sift together dry ingredients in a medium mixing bowl. Add milk, vanilla, and butter. Mix by hand until thoroughly combined. Add eggs and beat well. Mix in chocolate chips just until combined. Pour into greased 9 x 13″ pan or two 8″ round cake pans. Bake at 350 F for 30-35 minutes for 2 cake pans or 35-40 minutes for 9X13″ pan or until a toothpick inserted at center comes out clean. Cool thoroughly on a wire rack.

Frost cake with your favorite chocolate frosting or the Cream Cheese frosting I shared, but leave out the maple flavoring.
