Too Many Zucchini? Never!
I know a lot of people end up with more zucchini than they want. They give extras away to neighbors, friends, and co-workers. There are even jokes about leaving zucchinis on peoples’ doorsteps at night to get rid of the abundance.
I never seem to have that problem. Mainly because I have such a problem with squash vine borers. The organic methods I attempt never seem to work really well, and I’m not planning to start spraying with non-organic pesticides. So the zucchini harvest is usually pretty meager.
This year I was really glad to see that the Black Beauty Zucchinis from Mary’s Heirloom Seeds held up much better than some of the hybrids I’ve planted in recent years. Even though they are infested with the vine borers and are struggling with the drought, they have continued to produce. I was thrilled to find several perfectly sized zucchini on the vines yesterday.
How Do You Like Your Zucchini?
As a kid, I kind of stuck my nose in the air at zucchini. Now I love it! It’s great grilled over a wood fire, stir-fried with other veggies, sliced thin and added to lasagna, fried in a little oil and added to an omelet, chopped into spaghetti sauce, grated into bread and muffins…the list goes on and on. Yum!

I didn’t get a single female flower on my 4 zucchini plants this year. Ever hear of anything like that???

I’ve never had that happen. Did you have unusual conditions? Vine borers? I wonder if you had female flowers but they weren’t pollinated? Have you notice a lack of bees this year? I hope you find out and have better luck next year!
Puree them in the blender or processor. bag in 1 cup sixe and freeze.Instead of milk in baking use the Zucchini milk.It is fabulous and cheap.
