Chocolate Pudding Muffins

Sounds decadent, right? Well, I ‘healthied’ it up for you and made this with whole grains and a real dairy pudding from scratch. I started out by using the Muffin Mix I’ve posted about umpteen times, then I used Homemade Chocolate Pudding in the middle.

After you make the pudding, set it aside to cool while you make the muffin batter. I made batter for 3 dozen muffins.

 

Chocolate Pudding Muffins

  • 6 cups muffin mix
  • 2/3 cup cocoa powder (I used organic, fair trade)
  • 3 cups milk or sour milk (I used whey from making cottage cheese)
  • 1 cup canola oil
  • 4 eggs
  • 1 recipe Homemade Chocolate Pudding (you will only need part of the recipe, so you can snack on the rest) 🙂

Mix all ingredients, except pudding, until just combined. Spoon batter into muffin cups, filling 1/3 full. Add a small spoonful of chocolate pudding into the center of each cup. Top with remaining batter. Bake at 400 F for 15 – 20 minutes, or until toothpick inserted near center comes out mostly clean. Remove from oven and cool for 5 minutes. Remove muffins from tins and cool on rack. Refrigerate when cool.

Fill the cups 1/3 full with batter, add a small spoonful of pudding, then top with remaining batter.

 

Try not to eat them all in one sitting so you have some to enjoy the next day. 🙂

  2. My favorite chocolate recipe is my mom’s brownies. But those aren’t healthy. I’m delighted to find a muffin mix! I’ve been looking for some healthy mix recipes to keep in the pantry for days I am too busy to cook from scratch. These, and the pudding recipe look wonderful.

      I’ve eaten them for both! Since they’re made with wholesome ingredients and not a lot of sugar, I figure they are ok for breakfast too. 🙂
