Harvesting A Heritage Turkey

I hadn’t planned to process any turkeys this early in the year. Mr T, my one year old Black Slate tom, gave me reason to change my mind. It started off innocently enough. He began following me very closely while I did my chores in the coop and pasture. One day he attacked me while my back was turned and scratched my thigh, leaving a deep purple bruise. I didn’t want to butcher him, but no matter what I wore (red makes them think you’re another tom) or what I did, I couldn’t do my chores without carrying something to fend off an attack. It’s not easy to collect eggs while holding a broom and watching for an ambush from a full grown tom turkey!

So Mr. T had to go. I butchered him on Monday and ground the meat for sausage on Tuesday. The carcass simmered on the stove all afternoon Tuesday and all day Wednesday. I’m glad to have the threat removed, but now I’m trying to decide what to do with my two heritage turkey hens, The Turkettes, as I’ve nicknamed them. I suppose this is the end of my heritage turkey hopes and dreams…until we have a larger barn and pasture to raise them.
