Gathering Duck Eggs Once Again!

I love using duck eggs in baking, French toast, and even scrambled eggs (with some milk added)…but my one remaining duck hen stopped laying eggs over the winter. However, I have four young duck hens that have started laying recently and I’m loving all of the fresh duck eggs! I’m saving some for hatching, and the rest are being used in freshly baked bread. When I get a chance, I’ll gather some of the rhubarb from our garden to make rhubarb cake. Yum.
