Quick & Easy Scrambled Eggs

Scrambled eggs aren’t a difficult or time-consuming dish to make, but sometimes thereΒ just isn’t time for them. When you need a quick, high-proteinΒ breakfast, try this super easy recipe for ‘scrambled eggs.’

Basic Egg Scramble ~ What You Need

It really doesn’t take much to get this hot dish ready. Here’s all you need:

  • Microwave
  • Coffee mug (medium size)
  • Small sliver of butter
  • 1 or 2 eggs
  • 1 or 2 Tbsps milk
  • Salt and pepper

Place a very small sliverΒ (1/4 tsp or so)Β of butter into your coffee mug. Microwave it just long enough to melt the butter (10 seconds or less). Tilt the mug to coat the bottom with melted butter. (You can also use non-stick spray.)

Crack one or two eggs into your mug and add one tablespoon of milk for each egg. Use a fork to beat eggs and milk together.

Microwave on high for 30 seconds for one egg (45 seconds for 2) and stir. Microwave for 20-45 seconds more, or until eggs begin to expand and appear cooked (when they no longer look shiny).

Remove from microwave, sprinkle with salt and pepper, and allow to cool slightly before eating.

Want to Dress it Up?

You can add cheese, crumbled bacon or sausage, or fresh veggies to your eggs. Pre-cooked bacon or sausage can be added to the raw egg mixture before cooking. Fresh veggies (1 or 2 tablespoons) should be chopped, added to the mug with a pat of butter, and microwaved for 30 – 45 seconds before cooking eggs. Don’t overcook them. Remove the mug from the microwave, beatΒ eggs and milk in a separate bowl and pour into a mug. Microwave for another 20 – 45 seconds or until done. Cheese can be grated on top ofΒ the cooked eggs while still hot.

Breakfast for More Than One?

You can, of course, make enough eggs for the whole family this way. Either make the eggs one mug at a time for busy family members or cook all of the eggs in a larger bowl. Microwave for approximately 30 – 45 seconds for each egg, stir and microwave for another 20- 45 seconds for each egg.

Note: Cooking time may vary with your microwave. Keep an eye on your eggs!
