Duck Salad Sandwich
If you like chicken or turkey salad, I’m pretty sure you’ll like duck salad too. 2013 was the first year I raised meat ducks for our table, and I must say, YUM! The meat is tender and tasty, resembling the dark meat on a chicken. Recently, I cooked a duck in the crock pot and used some of the leftover breast meat to make a really yummy lunch…Duck Salad Sandwiches!
Here is the recipe I used, along with some options you might like to try…
Duck Salad Recipe
(Enough for 2 sandwiches)
- 1 cup cooked, chopped duck meat
- 4 heaping Tbs mayonnaise (I used olive oil mayo for a lighter version)
- 1 Tbs prepared mustard
- 1/4 cup halved seedless grapes
- sprinkle of salt & pepper
Combine ingredients thoroughly and serve on a bed of mixed greens or in a sandwich. If you like, you can add 1 or 2 Tablespoons of chopped green onion or celery in addition to the grapes, or substitute chopped apple for the grapes.
