Whole Grain Cinnamon Pancake Mix

Make Ahead Mix Saves You Time and Money!

It’s nice to have baking mixes in the cupboard for whipping up quick breads, muffins (you can find my whole grain muffin mix here), pancakes and waffles, cakes…you name it.  Walking down the baking aisle at the grocery store is a testament to the popularity of these handy mixes. However, many of the purchased mixes contain artificial colors and flavors, bleached white flour, and other questionable ingredients. The natural foods aisle may have mixes that are much healthier for you, but they are costly. It’s not uncommon to pay $4 – $6 for a mix that makes a dozen muffins or enough pancakes for a family of 4. That’s just not in the budget for most folks, so what to do?

Why not make your own mixes from whole grain flours and other real ingredients? It only takes a few minutes to mix the ingredients together and the cost is a fraction of what you’ll pay for a mix at the store, even if you use organic ingredients. You also have control over what goes in the mix and spices can be changed to customize the mix to your family’s tastes.

 

Today I am sharing the Whole Grain Cinnamon Pancake Mix I created using my Better Homes & Gardens recipe as the starting point. I hope you enjoy eating these with your family. You can also put 2 1/2 cups of the mix in a nice jar, add some dried fruit or nuts, top it with some pretty fabric and a ribbon, and give it as a gift.

 

Whole Grain Cinnamon Pancake Mix

  • 4 cups unbleached flour
  • 4 cups 6 grain flour
  • 4 cups whole wheat pastry flour
  • 2 Tbsp cinnamon
  • 8 Tbsp Baking powder
  • 3 tsp salt
  • 3/4 cup sugar

Mix ingredients thoroughly and store in an air tight container.

 

Whole Grain Cinnamon Pancakes

  • 2 1/2 cups pancake mix
  • 2 1/2 cups milk
  • 2 large eggs
  • 4 Tbsp vegetable oil
  • 1 tsp molasses

Mix all ingredients together in medium bowl, just until combined. Batter will be slightly lumpy. Fry on hot, greased griddle until browned on both sides. Serve hot with syrup, yogurt, or jam.
